Asparagus is one of my all-time favorite vegetables. It’s one of those veggies that many often forget about.  Not only does asparagus contain a ton of nutrients like vitamin A, vitamin K, vitamin B1, vitamin C, folate, iron, and fiber, but it’s also a prebiotic food.

A prebiotic (not to be confused with a probiotic) is an indigestible substance usually in the form of carbohydrates.  It feeds off of the ‘friendly bacteria in your intestine, which in turn helps them become more active.  What does this mean for you — good digestive health!

For a simple quick and healthy hummus dip snack while you’re working, or as quick nourishment before you head out the door to pick-up your kids from school, etc. – this recipe can be really satisfying!

I never thought about making a version of hummus before, until one day I decided to dip some sliced red bell peppers into some peanut butter.
